Aquiares Estate – Centroamericano Red Honey
Costa Rica: Cartago
Aquiares is one of Costa Rica’s most historic coffee estates, located on the fertile slopes of the Turrialba Volcano between the Aquiares and Turrialba rivers. Founded in 1890, the farm became known for producing high-quality washed coffees and helped establish Costa Rica’s reputation in international coffee markets.
After harvesting, the coffee cherries are depulped and a moderate amount of mucilage is intentionally left on the parchment. The coffee is then dried with this layer still attached, without undergoing full washing. With more sugars interacting during a slower drying process, this results in a sweeter, fruitier, and more complex cup.
