Finca El Bosque
El Salvador: Apaneca-llamatepec
For four generations, Fernando Alfaro and his family have been cultivating coffee on their 37-acre farm. The farm, named Finca El Bosque due to its picturesque surroundings of a beautiful forest, produces orange and yellow Bourbon and Castillo varieties.
Each harvest is meticulously picked and sorted before being placed in airtight barrels for 96 hours. This process involves selected microbes and carefully controlled temperatures to ensure precise fermentation. Following fermentation, the cherries are spread on raised beds and regularly turned for over 20 days to ensure gentle and even drying.
