The Natural Anaerobic process begins with carefully washing and cleaning the freshly harvested red cherries to ensure they are free from any impurities. Once cleaned, the cherries are placed in fermentation tanks for a period of 72 hours. These tanks are equipped with oneway valves to prevent any oxygen from entering, creating an ideal anaerobic environment for fermentation. During this time, the cherries undergo a controlled fermentation process that enhances their unique flavor profile.
