This exceptional coffee is cultivated by indigenous small-scale farmers who maintain a deep cultural connection to the land through organic farming practices. They grow their coffee on smallholdings, integrating shade trees, bananas, corn, and beans to enhance biodiversity and improve soil health. Each cherry is hand-picked, carefully sorted, and processed on-site in micro-mills, where depulping, fermentation, washing, and drying are executed with meticulous care to ensure the highest quality.

The success of these farmers is supported by local cooperatives, which provide vital resources and guidance. These cooperatives offer training in advanced organic farming techniques and work to improve local infrastructure, including upgrading roads and establishing storage facilities. The Cooperativa Agraria Frontera San Ignacio (Coopafsi) plays a pivotal role in this support. Based in the provinces of Jaén and San Ignacio in the Cajamarca region of Peru, Coopafsi serves over 300 producer-members and partners with ten local organizations. The cooperative provides financial assistance, technical training, and expertise to elevate coffee quality and improve the livelihoods of farming families. Additionally, Coopafsi runs a centralized coffee nursery, ensuring ongoing farm renovation and long-term sustainability. Through these collaborative efforts, Coopafsi empowers its members, fosters a sustainable community, and remains committed to producing high-quality coffee while preserving the environment for future generations.
