TRAINING EXCHANGE PROGRAM

In the Cuzco region we support a Peru-Ecuador training exchange program for a select group of technicians on production practices and especially to see how Ecuador handles the fermentation and drying processes of cocoa.

EMPOWERMENT VIA VERIFICATION

In Peru, in the Province San Ignacio, Cajamarca, two coffee associations are verified to operate according to the C.A.F.E. Practices Code of Conduct. Certification process starts with comprehensive training for growers. During such trainings, farmers learn how to properly sort, dry and ferment the coffee beans to improve coffee quality.

SPANISH TRANSLATION OF COFFEE GUIDE

We support worldwide coffee education thanks to the Coffee Guide written to be used by growers, processors, traders, exporters, coffee associations and people involved in transport, finance, quality control, certification and other sectors related to coffee in producing countries. The Spanish version received voluntary technical support from over 100 coffee personalities, organizations and companies. The Coffee Guide has been used as a resource in many seminars and workshops organized by ITC.

Nicaragua SHG Rainforest Alliance

Appreciated for its pronounced acidity, subtle flavors and its sweetness, this is a well-balanced coffee. SHG means Strictly High Grown and refers to beans grown at high altitudes. These beans mature more slowly and grow to be harder and denser than beans grown at lower altitudes. The inherent consistency and taste attributes of high grown beans makes them more desirable. This Strictly High Grown coffee is Rainforest Alliance Certified. This is a reward for the efforts made regarding sustainable coffee practices, both social and environmental-wise. Nicaragua SHG Olomega Supreme

Colibri SHG Olomega and Olomega Supreme are produced by a small farmers’ association belonging to the Chorotega indigenous community: Aldea Global. Aldea Global is a valuable association for the progress of Nicaraguan rural families who produce coffee in harmony with the environment and prioritizes social responsibility and gender equity. Nicaragua SHG Olomega

Clean cup, nutty, chocolate notes. Colibri SHG Olomega and Olomega Supreme are produced by a small farmers’ Association belonging to the Chorotega indigenous community: Aldea Global. The word "Olomega" comes from the indigenous term Olomeka which means "carry in one's arms". Olomega was a village inhabited by the Chorotega indigenous community, nowadays also known as Aldea Global. In Aldea Global's logo, the link with Olomega is still clear via the petroglyph. Guatemala SHB EP Laguna De Ayarza

This coffee is characterized by a delicate flavor, dark chocolate notes, a mild acidity, a smooth body and a nice caramel finish. The Ayarza lake is located in a crater 1,400 meters above sea level. Volcanic pumice soil, very high altitudes, plenty of rain, variable humidity, and the proximity of volcanoes characterize the area. The dry season has lots of sun.  Although clouds, fog, and heavy dew are common in the early morning, they disappear quickly allowing the Ayarza coffee to be sun-dried. Guatemala SHB EP Huehuetenango

This coffee is characterized by a fine, intense acidity with full body and pleasant wine notes. Huehuetenango is one of Guatemala’s highest and driest coffee growing regions. However, the region is protected from frost during the cooler months of the year, because of a warm wind blowing into the mountains, coming from the plains of Tehuantepec in Mexico. Huehuetenango’s extreme remoteness requires that almost every producer processes its own coffee. Guatemala SHB Atitlán paraiso Tzutujil

Delightfully aromatic with a bright/strong and durable citrus acidity and full body. This delicious coffee is grown near Santiago Atitlán, a municipality in the Sololá department of Guatemala. Santiago Atitlán means “at the water” in the Nahuatl Atitlan language, and “birdhouse” in Tz’utujil Tz’ikin Jaay. The town is located at a bay of Lake Atitlan between two volcanoes: San Pedro and Toliman. The majority of the residents are indigenous Mayans. It was the capital of the Tz’utujil people in pre-Columbian times and its name was Chuitinamit back then. Santiago Atitlán is the home of the Cojolya Weaving Center and Museum, founded by the Cojolya Association of Maya Women Weavers. The museum shows the history, tradition, and process of backstrap-loom weaving, and the evolution of the traditional costume of the Tzutujil, the indigenous people of Santiago Atitlán.
